谭兆祥教授于加拿大多伦多大学获得学士、硕士和博士学位。他于1981年加入香港中文大学医学院,是医学院的创始成员,在2012年退休。在香港中文大学的31年时间里,他曾出任生理学系主任、生物医学学院副院长(医学教育)以及医学院副院长(学生事务)。退休之后,他仍然在香港中文大学医学院教授多门医学课程,包括在那打素护理学院从事生理学课程的本科及研究生教学工作。谭教授于2019年11月加入香港中文大学(深圳)生命与健康科学学院,主要负责生理学等医学基础课程的设计和教学工作。

谭兆祥教授的科研领域包括高海拔的基因适应性。他研究了藏族人和汉族人的基因特点,以寻找使人更加适应高海拔环境的基因。谭教授课题组最早发现EPAS1基因的自然选择使藏族人更加适应高海拔环境。谭教授也投身于天花粉蛋白的机理研究。天花粉蛋白是I类核糖体失活蛋白,具有抗病毒作用,可以抑制艾滋病病毒和疱疹病毒的复制。谭教授课题组的发现支持了天花粉蛋白有选择性地诱导受感染细胞的凋亡,同时忽略掉未受感染的细胞的假设。 受感染的细胞过早死亡,限制了病毒的复制。此种机制可能涉及到MAPK信号通路。
